Spooky Halloween Recipes With MilkAndEggs

Hey y'all! Remember how I worked with Milk And Eggs just about a month ago and whipped up a bunch of recipes in the kitchen? Pumpkin Stuffed Peppers

INGREDIENTS:

- 4 medium orange bell peppers
- 1 package (8.8 oz) microwavable Spanish style rice
- 1 lb ground turkey
- 1/2 cup chopped mushrooms & onions (from 8 oz container)
- 1 can (8 oz) roasted garlic tomato sauce
- 1/4 teaspoon freshly ground pepper

Directions:

1. Heat oven to 375°F. Cut thin slice from stem end of each bell pepper to remove top. Remove seeds and membranes; rinse peppers. Reserve tops. If necessary, cut thin slice from bottom of peppers so they stand up straight. Using small sharp knife, cut out small eyes, nose and teeth from each pepper to look like jack-o’-lantern.

2. Cook rice in microwave as directed on package. Meanwhile, in a 12-inch skillet, cook turkey and chopped vegetables over medium-high heat from 5-7 minutes, stirring occasionally until turkey is thoroughly cooked; drain. Stir in 1/2 cup of the tomato sauce, the ground turkey, and cooked rice.

3. Stuff peppers with turkey mixture. Pour remaining tomato sauce in an ungreased 11x7-inch (2-quart) glass baking dish. Stand peppers upright in dish. Replace pepper tops.

4. Cover tightly with foil. Bake 45 minutes. Uncover; bake about 15 minutes longer or until peppers are tender.

Caramel Apples

INGREDIENTS:

- 4 Granny Smith apples (or any other variety)

- 4 (4.51-oz.) bag of Werther's Original Soft Caramels.

- Assorted toppings (ex: chopped nuts, pecans, sprinkles, or melted chocolate for drizzling)

EQUIPMENT:

- 4 lollipop sticks or popsicle sticks

Directions:

1. Wash and thoroughly dry the apples, then press a lollipop stick firmly into the top of each apple. Line a baking sheet with wax paper.

2. Unwrap the caramels, then place them in a medium saucepan set over medium-low heat. Cook the caramels, stirring occasionally, until they melt and the mixture is a smooth consistency. Reduce the heat to low.

3. Dip each of the apples into the caramel mixture, shaking off any excess and scraping any caramel off the bottoms of the apples. Roll the apples in your preferred toppings then place them on the lined baking sheet. Refrigerate the apples for 15 minutes or until the caramel has firmed up. Serve the apples immediately or store them in the fridge until ready to serve.
